A classic Nigerian dish! Party Jollof Rice is a popular West African one-pot dish that’s perfect for special occasions. A simple recipe to prepare delicious Party Jollof Rice:

Ingredients:
- 1 cup of uncooked long-grain rice
- 2 tablespoons of vegetable oil
- 1 large onion, chopped
- 2 cloves of garlic, minced
- 1 teaspoon of grated ginger
- 1 teaspoon of ground cumin
- 1 teaspoon of paprika
- 1/2 teaspoon of cayenne pepper (optional)
- Salt and black pepper to taste
- 2 cups of tomato puree or crushed tomatoes
- 2 cups of beef or chicken broth
- 2 bay leaves

Instructions:
1. *Rinse the rice*: Rinse the rice in a fine mesh sieve until the water runs clear. Drain and set aside.
2. *Heat oil in a pot*: Heat the oil in a large pot over medium heat.
3. *Sauté onions, garlic, and ginger*: Add the chopped onion, minced garlic, and grated ginger. Sauté until the onions are translucent.
4. *Add spices*: Add the cumin, paprika, cayenne pepper (if using), salt, and black pepper. Stir well.
5. *Add tomato puree*: Add the tomato puree or crushed tomatoes. Stir well.
6. *Add broth and bay leaves*: Add the broth and bay leaves. Stir well.
7. *Add rice*: Add the rinsed rice to the pot. Stir well to coat the rice with the tomato mixture.
8. *Bring to a boil*: Bring the mixture to a boil.
